ROCKS STARS – TALES OF THE COCKTAIL 2010 TOP 5

Rules are made to be broken, and while Rocks Stars, originally conceived as a profile column focusing on “Movers and Shakers” in the sprits industry, will for all intents and purposes remain that way, from time to time I may just throw in some thoughts on experiences I have along the spirits trail that I find need some play.

To that effect, I would like to bang a few keys on the keyboard, updating you on this year’s 8th Annual Tales of the Cocktail conference held in New Orleans this past hot and steamy week, by bringing to light what I consider to be the week’s top five events:

Here we go, in no particular order, except the last one:

5. Wednesday evening’s Beefeater Welcome party. Held in the New Orleans Contemporary Arts Center, This “welcome party” had it all: Alice in Wonderland characters floating through the room, trapeze artists floating through the air, and some beautiful cocktails with the “always classic” Beefeater gin, made by some of the world’s great bartenders, like Jamie Gordon and Audrey Saunders, while others, like Tony Abou-Ganim and Dale DeGroff roamed the room. A great way to kick into the week’s festivities.

ROCKS STARS: PROFILES IN CUBAGE

The last thing Shawn Starbuck Kelley ever expected, was to be on the receiving end of a pitch… In her life, it’s usually her that does the asking. Not that she isn’t thrilled to be promoting something to the press. That’s something she’s VERY comfortable doing! It’s just that she’s just usually discussing one of the many spirits brands in her stable, not the finer points of the world according to Shawn. So when I asked her if I could interview her for Rocks Stars, Shawn, while surprised, was thrilled to sit down for a chat.

As Director of Public Relations for Pernod-Ricard USA (www.pernod-ricard.com), producer of such iconic brands as Absolut, Beefeater, Plymouth, The Glenlivet, Chivas, and Jameson, Shawn is one of a handful of names at the top of the leader board in the world of spirits, mixology and cocktails, who didn’t get there by shaking a shaker, or squeezing a lime. Not that she didn’t roll up her sleeves and do some dirty work along the way, it’s just that her path was a bit more circuitous, and possibly, dare I say it…, more interesting?

No, she wasn’t a lawyer, doctor, or pop singer who gave up a lucrative career to follow her dream of a life in food, nor did she leave the family coffee shop business, as her name may imply, to strike out on her own. Starbuck is a family name, but they’re not based in Seattle, and the closest she comes to being in any way associated with a coffee brand, is that Pernod Ricard owns Kahlua.

Growing up as the last of five children in a middle class family in Detroit Michigan, Shawn recognized early that food (and drink) would always play an important role in her life. She says, “I came from a family of gourmands. I grew up with an appreciation for good food, whether it was fresh fish and local veggies during summers on the shore of Lake Michigan, or learning how to make my parents’ evening drinks when they came home (Mom’s drink was an Old Fashioned and Dad drank

Turning Japanese

Over the course of two days I was side by side with some of the greatest cocktail minds in the country who sat quietly in the Hiro Ballroom in the Maritime Hotel (www.themaritimehotel.com). These bartenders, mixologists, writers, scientists and all around mega-nerds surrounding me all came to check out the cocktail master himself, Kazuo Uyeda from Ginza, Japan, owner of the Tender Bar, and learn the famed Hard Shake from the man who had created it.

Uyeda-san’s visit to New York, courtesy of Greg Boehm’s Cocktail Kingdom (www.cocktailkingdom.com), Beefeater Gin (www.beefeatergin.com), Suntory Whiskeys (www.suntory.com) and Smirnoff Vodka (www.smirnoff.com), drew this collection of America’s brightest drinks practitioners together in anticipation of learning the precise ways of Japanese bartending from this internationally known cocktail-zilla who has spent the last 45 years behind the bar perfecting the art of cocktail deliciousness – his ultimate goal. We didn’t know it then, but an eye-opening cultural exchange was about to take place.

Over those two days we sat listened, percolated, drank, and laughed with this man who has spent the last four decades perfecting his craft. The style he taught us was as specific, detailed, exacting and considerate as the Japanese tea ceremony or the hand-crafted Samurai sword. To the drop, and in absolute detail, he explained the minutiae of every element of his cocktail execution.

That first morning I was introduced to Uyeda-san’s concept of executing cocktail perfection. He discussed the intrinsic and philosophical elements of his style that are embodied by drink after drink being delivered with the same stance, same shake, same pour, and same snapping wrist motion that releases the last drop from the shaker. His decades of research and experimentation have been driven towards a singular goal: the pursuit of perfection and deliciousness.

He first discussed the “Japanese Mindset” which introduced me to the idea of putting your mind into your cocktail. This was interesting in the respect that the process was the product. The concept of creating the anticipation with your guest was something I tried to picture myself doing, with little immediate success. Spirited sipping leads to $5,800 raised at the Hearts & Cocktails for Haiti Benefit

Who said people drink just for pleasure? Sometimes they drink to help those in pain. At least that’s what was going on at Bar Celona in Brooklyn on Sunday, January 31st when hundreds of spirits industry professionals and cocktail enthusiasts gathered to raise a glass and some much needed funds for Haiti.

Haitian American Ray Raymond of Leblon Cachaça and Dave Catania of Chairman’s Reserve organized this important evening and welcomed their industry friends and cocktail lovers to join them for cocktails created especially for the evening by some of New York’s best mixologists.
